Ingredients
Whale meat cut in bite size pieces (use Minke, Pilot whale or Dolphin)
2 tins Coconut milk (or 1 tin coconut milk and an equal part of fish or chicken stock)
1 Onion
6 small potatoes
250 g mushrooms
2 Red peppers
3 sticks of Lemon grass
3 slices of galangla (optional - a root plant a bit like ginger or fresh tumeric root)
1 Tablespoon of red curry paste
1 Tablespoon of fish sauce
1 lime
Method .
If using Minke whale or young dolphin just sauté for a few minutes or cook in the coconut milk instead of sauté, if using pilot whale sauté a little longer. Cut potatoes in small pieces boil until soft. In another pot sauté onions, peppers for 2 mins on high heat, add lemon grass, galangla (if you can get it) and mushrooms and red curry paste, lower the heat and put the lid on the pot. When the mushrooms are cooked add the coconut milk, potatoes and fish sauce and simmer for about 7 mins. Then add the whale meat. Squeeze over lime juice and serve. Fresh coriander is a great garnish if you can ever get it, or basil maybe parsley.
