Whale in the Middle

Wa-atch-aht (Neah Bay, Washington)
Place two sockeye salmon fillets skin-side-down in a deep baking dish. Leave a space in the middle where you place Whale Jerk Candy (see: Whale Jerk Candy Recipe).
Cover salmon fillets and Whale Jerk Candy with more salmon fillets (skin-side-up).
Cover dish with foil and bake at 325 degrees F for 2 hours.
Note: leave fins and gill plates on fillets to ensure as much flavour as possible.
