Whale Jerk Candy

Wa-atch-aht (Neah Bay, Washington)
| 1) | Marinade whale meat slices (¼ - ½ inch thick) for 2 days in teriyaki sauce. |
| 2) | Season meat with salt and pepper. |
| 3) | Place meat on rack in smoker. |
| 4) | Smoke for 2 hours then sprinkle with brown sugar and smoke for 2 more hours. |
| 5) | Turn meat. Season with salt and pepper, smoke for 2 hours, sprinkle with brown sugar and smoke for 2 more hours. |
| 6) | Remove meat from smoker and place in oven on a rack in a baking tray. Bake in oven at medium-low (325 degrees F) for 1½ hours. |
Keep in freezer bags and store in freezer.
