Whale Jerk Candy

1)

Marinade whale meat slices (¼ - ½ inch thick) for 2 days in teriyaki sauce.

2)

Season meat with salt and pepper.

3)

Place meat on rack in smoker.

4)

Smoke for 2 hours then sprinkle with brown sugar and smoke for 2 more hours.

5)

Turn meat. Season with salt and pepper, smoke for 2 hours, sprinkle with brown sugar and smoke for 2 more hours.

6) Remove meat from smoker and place in oven on a rack in a baking tray. Bake in oven at medium-low (325 degrees F) for 1½ hours.

Keep in freezer bags and store in freezer.
